Amazing Banana Bread. Chocolate chips optional but recommended.
Everyone claims to have the best banana bread recipe, but honestly this may be it. Even if you’re not into gluten free and sweetened with maple syrup baked goods, or don’t need to be eating gluten free, this banana bread, and chocolate chip variety is the bomb. For real. Ok I’m not going to give you my family history or the history of each ingredient. We all know we just want the recipe.
Gf (Chocolate chip) Banana Bread
1.5 cups almond flour
1/2 cup gluten free flour blend- I like Bob’s Redmill 1 to 1
1 teaspoon each baking soda and baking powder
2 eggs
1/3 cup butter, ghee, or coconut oil - they all work deliciously
3/4 teaspoon salt
1 tablespoon vanilla extract
2/3 cup maple syrup - if your bananas aren’t super super ripe I’d increase this to 3/4 also if you’re ommiting the chocolate.
Juice of half a lemon
4 very very ripe bananas
1/4 cups semi-sweet dark chocolate chips
Mix dry ingredients in a mixing bowl or in a measuring pitcher.
Mix wet ingredients together including the bananas.
Mix together. Add chocolate chips.
Grease a pie plate or small pyrex with coconut oil, butter or ghee and pour batter in. Bake at 350 for about an hour or until the top is browning and a knife comes out clean except for chocolate and is hot on the thick pad of your hand.
These can also work as muffins with muffin cups.
Let cool. The worst. And it is way better the next day. Super moist and gooey. Delish. Enjoy.
